French Onion Stuffed MushroomsNow, what fine Vegan dish could go great with your first selection from the Premier Wine Series? The California Wine Club wine and food paring experts have a great recommendation, and that is for French Onion Stuffed Mushrooms, and their recipe can very easily be modified to be Vegan by just substituting Vegan margarine for butter and Vegan cheese for that other stuff.

Ingredients are as follows:

One large white onion
One 8-oz basket of Baby Bella mushrooms (about 20)
1/4 cup Panko bread crumbs
Three Tbsp Earth Balance Spread (replacing the original butter), divided
One branch of fresh thyme (2-3 in.)
One bay leaf
1/4 cup Pinot Noir
Salt & pepper
1/8 lb Vegan cheese, shredded. We recommend our preferred choice for Vegan cheese, Follow Your Heart. The original recipe calls for Gruyere but unfortunately Follow Your Heart does not yet offer a Vegan Gruyere. Instead, you could choose among their Smoked Gouda, Mozzarella or Garden Herb varieties, or any of their other non dairy cheeses. Both the Mozzarella and Garden Herb are available shredded, as is another possibility, their Fiesta Blend shreds.

Cooking Instructions:

Peel and thinly slice the onion.

Remove stems from cleaned mushrooms and finely chop about half of them.

Brown the Panko bread crumbs with one Tbsp Earth Balance spread over medium heat. Remove from pan and set aside. In the same pan, over medium-low heat, add two Tbsp Earth Balance, onions, thyme and bay leaf. Cook until onions have browned (about 20 minutes). Add the chopped mushroom stems and continue to cook about 10 minutes. Remove the thyme and bay leaf and discard. Add the wine and cook until all the liquid has evaporated. Salt and pepper to your preference. Remove from pan and set aside.

Cook the mushroom caps in the same pan (2-3 minutes each side). Fill each mushroom with onion mixture, top with Vegan cheese and bread crumbs and place on baking sheet. Bake the mushrooms at 375 for 10-15 minutes or until the cheese has browned. (Careful – Vegan cheese does not melt or brown the same way dairy cheese does – you may want to zap it in the microwave for 20-25 seconds to help it melt, then return to oven to finish browning).

Enjoy with the rest of that bottle of Pinot Noir.
